- 1 Tbsp vegetable oil
- 2 lb halal beef chuck cut into 1-inch cubes
- 1 medium yellow onion chopped
- 2 carrots peeled and sliced
- 2 celery stalks chopped
- 3 cloves garlic finely chopped
- ¼ cup tomato paste
- 6 cups halal beef broth low-sodium
- 1 cup halal red wine substitute grape juice + vinegar – optional
- 1 Tbsp halal Worcestershire sauce
- 2 fresh thyme sprigs
- 2 bay leaves
- 1 lb baby potatoes halved
- 1 cup frozen peas
- ¼ cup fresh parsley chopped
- Kosher salt & black pepper to taste
- Optional: 1 tsp paprika ½ tsp dried rosemary, 1 Tbsp cornstarch slurry for thicker gravy
Brown the beef: Season cubes with salt & pepper, brown in hot oil, then set aside.
Sauté vegetables: Cook onions, carrots, celery; add garlic and tomato paste.
Build the stew: Deglaze with grape juice substitute or broth, return beef, add broth, Worcestershire sauce, thyme, and bay leaves.
Slow cook: Simmer on low for 1.5 hours.
Add potatoes & peas: Cook 30 mins more; add cornstarch slurry if needed.
Garnish & serve: Remove herbs, sprinkle parsley, and serve hot.
