Ingredients
  

  • 1 Tbsp vegetable oil
  • 2 lb halal beef chuck cut into 1-inch cubes
  • 1 medium yellow onion chopped
  • 2 carrots peeled and sliced
  • 2 celery stalks chopped
  • 3 cloves garlic finely chopped
  • ¼ cup tomato paste
  • 6 cups halal beef broth low-sodium
  • 1 cup halal red wine substitute grape juice + vinegar – optional
  • 1 Tbsp halal Worcestershire sauce
  • 2 fresh thyme sprigs
  • 2 bay leaves
  • 1 lb baby potatoes halved
  • 1 cup frozen peas
  • ¼ cup fresh parsley chopped
  • Kosher salt & black pepper to taste
  • Optional: 1 tsp paprika ½ tsp dried rosemary, 1 Tbsp cornstarch slurry for thicker gravy

Instructions
 

  • Brown the beef: Season cubes with salt & pepper, brown in hot oil, then set aside.
  • Sauté vegetables: Cook onions, carrots, celery; add garlic and tomato paste.
  • Build the stew: Deglaze with grape juice substitute or broth, return beef, add broth, Worcestershire sauce, thyme, and bay leaves.
  • Slow cook: Simmer on low for 1.5 hours.
  • Add potatoes & peas: Cook 30 mins more; add cornstarch slurry if needed.
  • Garnish & serve: Remove herbs, sprinkle parsley, and serve hot.
