Ingredients
  

  • 2 lb sweet potatoes peeled and sliced (½-inch thick)
  • ¾ cup dark brown sugar or light brown sugar
  • 1 cup white sugar
  • 1 stick 8 tbsp unsalted butter (halal dairy)
  • 4 tbsp frozen orange juice concentrate thawed
  • 2 tbsp alcohol-free vanilla extract
  • 2 tsp ground cinnamon
  • 1 tsp ground nutmeg
  • ¼ tsp ground ginger
  • ¼ tsp salt

Instructions
 

  • Preheat oven to 350°F (175°C) and lightly grease a baking dish.
  • Arrange sliced sweet potatoes evenly in the dish.
  • In a saucepan, melt butter over medium heat.
  • Add brown sugar, white sugar, cinnamon, nutmeg, ginger, salt, orange juice concentrate, and vanilla. Stir until dissolved.
  • Pour syrup evenly over the sweet potatoes.
  • Cover with foil and bake for 30–40 minutes.
  • Remove foil, baste with syrup, and bake uncovered for 20–25 minutes until glazed and tender.
  • Rest for 5 minutes before serving. Spoon syrup on top.
