  • 2 tbsp extra-virgin olive oil
  • 1 medium onion chopped
  • 2 medium carrots chopped
  • 2 celery stalks chopped
  • 1 red bell pepper chopped
  • 2 garlic cloves minced
  • tsp Italian seasoning
  • ½ tsp ground black pepper
  • ¼ tsp salt or to taste
  • 8 cups low-sodium vegetable broth
  • 1 medium head green cabbage halved and sliced
  • 1 large tomato chopped
  • 2 tsp white-wine vinegar
Optional Add-ins:
  • A handful of spinach or kale
  • A pinch of red chili flakes for heat
  • 1 tbsp fresh lemon juice for extra brightness

Method
 

  1. Sauté Veggies: Heat olive oil in a large pot over medium heat. Add onion and cook for 3–4 minutes until translucent.
  2. Build Flavor: Add carrots, celery, and bell pepper. Sauté for 5–6 minutes, stirring occasionally.
  3. Add Seasoning: Stir in garlic, Italian seasoning, pepper, and salt. Cook for 1 minute until fragrant.
  4. Pour Broth: Add vegetable broth and bring to a boil.
  5. Add Main Veggies: Stir in cabbage and tomato. Reduce to a simmer.
  6. Simmer: Cook uncovered for 15–20 minutes or until vegetables are tender.
  7. Finish: Stir in white-wine vinegar and any optional ingredients. Adjust salt and pepper to taste.
