Strawberry Filling:
- 2½ pounds fresh strawberries washed, stemmed, chopped
- 1 cup water
- ½ cup granulated sugar
- 3 tablespoons cornstarch
- 2 tablespoons lemon juice
- 1/8 teaspoon kosher salt
Whipped Cream Frosting:
- 4 cups heavy whipping cream very cold
- ¾ cup powdered sugar
- 16 oz 2 bricks cream cheese, halal-certified
- 1½ tsp vanilla extract alcohol-free
- ¾ tsp almond extract alcohol-free
- ½ tsp kosher salt
White Layer Cake:
- 4 cups cake flour
- 8 oz unsalted butter softened
- ⅔ cup virgin coconut oil melted
- 2¼ cups granulated sugar
- 2½ tsp baking powder
- 1 tsp baking soda
- ¾ tsp kosher salt
- 1 cup egg whites
- 2 cups buttermilk
- 2 tbsp vanilla extract alcohol-free
- 1 tsp almond extract alcohol-free
Step 1: Prepare the Strawberry Filling
Combine strawberries, sugar, water, cornstarch, and lemon juice in a saucepan.
Cook over medium heat, stirring constantly, until thick and glossy.
Remove from heat and let cool completely (filling will firm up).
Step 2: Make the White Cake Layers
Preheat oven to 350°F (175°C).
Mix flour, baking powder, baking soda, and salt in a bowl.
Cream butter, coconut oil, and sugar in a separate large bowl until light and fluffy.
Add egg whites, vanilla, and almond extract.
Alternate adding dry ingredients and buttermilk, starting and ending with dry ingredients. Mix just until combined.
Pour into prepared round pans and bake 25–30 minutes. Cool completely.
Step 3: Make the Whipped Cream Frosting
Beat heavy cream and powdered sugar in a cold bowl until soft peaks form.
