Ingredients
  

Strawberry Filling:

  • pounds fresh strawberries washed, stemmed, chopped
  • 1 cup water
  • ½ cup granulated sugar
  • 3 tablespoons cornstarch
  • 2 tablespoons lemon juice
  • 1/8 teaspoon kosher salt

Whipped Cream Frosting:

  • 4 cups heavy whipping cream very cold
  • ¾ cup powdered sugar
  • 16 oz 2 bricks cream cheese, halal-certified
  • tsp vanilla extract alcohol-free
  • ¾ tsp almond extract alcohol-free
  • ½ tsp kosher salt

White Layer Cake:

  • 4 cups cake flour
  • 8 oz unsalted butter softened
  • cup virgin coconut oil melted
  • cups granulated sugar
  • tsp baking powder
  • 1 tsp baking soda
  • ¾ tsp kosher salt
  • 1 cup egg whites
  • 2 cups buttermilk
  • 2 tbsp vanilla extract alcohol-free
  • 1 tsp almond extract alcohol-free

Instructions
 

Step 1: Prepare the Strawberry Filling

  • Combine strawberries, sugar, water, cornstarch, and lemon juice in a saucepan.
  • Cook over medium heat, stirring constantly, until thick and glossy.
  • Remove from heat and let cool completely (filling will firm up).

Step 2: Make the White Cake Layers

  • Preheat oven to 350°F (175°C).
  • Mix flour, baking powder, baking soda, and salt in a bowl.
  • Cream butter, coconut oil, and sugar in a separate large bowl until light and fluffy.
  • Add egg whites, vanilla, and almond extract.
  • Alternate adding dry ingredients and buttermilk, starting and ending with dry ingredients. Mix just until combined.
  • Pour into prepared round pans and bake 25–30 minutes. Cool completely.

Step 3: Make the Whipped Cream Frosting

  • Beat heavy cream and powdered sugar in a cold bowl until soft peaks form.
  • Mix cream cheese, vanilla, almond extract, and salt until smooth.
  • Gently fold cream cheese mixture into whipped cream.

Step 4: Assemble the Cake

  • Place the first cake layer on a serving plate.
  • Spread cooled strawberry filling evenly on the layer.
  • Place the second cake layer on top.
  • Frost the top and sides with whipped cream frosting.
  • Chill for at least 1 hour before slicing.
