Essential:

- 1 cup shredded cheddar cheese or mozzarella/cheese blend
- 1 tbsp butter or olive oil
- 1 small onion finely chopped
- 2 cloves garlic minced
- 1 cup milk or low-fat milk for lighter version
- ½ cup cream optional, for extra creaminess
- Salt and pepper to taste
- 1 tsp paprika optional
- 2 tbsp fresh parsley or cilantro chopped (for garnish)
