Ingredients
  

Main:

  • 2 lbs cherry tomatoes halved
  • 4 cloves garlic minced
  • 1 medium red onion diced
  • 3 tbsp extra virgin olive oil
  • ½ tsp chili flakes
  • Salt & black pepper

Optional:

  • Fresh basil & oregano
  • Mozzarella or Parmesan
  • Fresh parsley
  • Lemon zest
  • Spinach

Instructions
 

  • Wash and pick fresh, firm cherry tomatoes.
  • Peel and mince garlic for aroma.
  • Slice red onion (raw for sharpness or cook for sweetness).
  • Drizzle with extra virgin olive oil.
  • Add chili flakes & paprika for heat and depth.
  • Season with a pinch of salt.
  • Sprinkle fresh black pepper.
  • Garnish with basil & oregano for a fresh finish.
