Ingredients
  

  • 2 cups shredded halal chicken breast
  • ¼ cup Greek yogurt
  • Salt & pepper to taste
  • 1 baguette cut into 3–4 pieces, toasted
  • 2 cups arugula
  • 2 Roma tomatoes thinly sliced
  • 8 oz mozzarella sliced

For Basil Pesto:

  • 1 cup fresh basil leaves
  • 3 cloves garlic
  • 3 tbsp pine nuts
  • cup grated Parmesan halal-certified
  • cup olive oil
  • Salt & pepper to taste

Optional Ingredients:

  • Cherry tomatoes instead of Roma tomatoes
  • Spinach or mixed greens instead of arugula

Instructions
 

  • Prepare Chicken: Boil or grill chicken until cooked. Shred and mix with Greek yogurt, salt, and pepper.
  • Make Pesto: Blend basil, garlic, pine nuts, Parmesan, olive oil, salt, and pepper until smooth.
  • Assemble Sandwich: Toast baguette slices. Spread pesto, add chicken, arugula, tomato, and mozzarella.
  • Serve: Close sandwich, press lightly, and serve immediately. Optional: grill lightly for melted cheese.
