- 2 cups shredded halal chicken breast
- ¼ cup Greek yogurt
- Salt & pepper to taste
- 1 baguette cut into 3–4 pieces, toasted
- 2 cups arugula
- 2 Roma tomatoes thinly sliced
- 8 oz mozzarella sliced
For Basil Pesto:
- 1 cup fresh basil leaves
- 3 cloves garlic
- 3 tbsp pine nuts
- ⅓ cup grated Parmesan halal-certified
- ⅓ cup olive oil
- Salt & pepper to taste
Optional Ingredients:
- Cherry tomatoes instead of Roma tomatoes
- Spinach or mixed greens instead of arugula
Prepare Chicken: Boil or grill chicken until cooked. Shred and mix with Greek yogurt, salt, and pepper.
Make Pesto: Blend basil, garlic, pine nuts, Parmesan, olive oil, salt, and pepper until smooth.
