Ingredients
  

For Buttermilk-Brine Marinade

  • kg chicken pieces halal
  • 3 cups buttermilk
  • 1 cup water
  • ¼ cup kosher salt
  • ¼ cup granulated sugar
  • 1 tbsp freshly ground black pepper
  • 2 tsp cayenne pepper

For Flour Mix

  • 2 cups all-purpose flour
  • 1 tsp onion powder
  • 1 tsp garlic powder
  • Rock salt to taste
  • 1 tsp freshly ground black pepper
  • ½ tsp cayenne pepper

For Coating

  • Prepared flour mix
  • ¾ cup buttermilk

For Frying

  • Cooking oil vegetable or canola – halal

Instructions
 

  • I wash and pat dry the chicken pieces.
  • In a large bowl, I mix buttermilk, water, salt, sugar, pepper, and cayenne.
  • I add the chicken and marinate it for at least 4 hours (overnight is best).
  • In another bowl, I mix flour with all dry spices.
  • I take chicken from the marinade and coat it well in flour.
  • I dip it lightly in buttermilk, then coat again with flour.
  • I let the coated chicken rest for 10 minutes.
  • I heat oil to medium-hot and fry chicken until golden and crispy.
  • I remove and rest the chicken on paper towels before serving.
