Ingredients
  

For the Crust and Crumb Topping:

  • 1 cup 2 sticks unsalted butter, softened
  • 1 cup light brown sugar packed
  • 1 ¾ cups all-purpose flour
  • 1 ½ cups quick or old-fashioned oats
  • ½ teaspoon baking soda
  • ½ teaspoon salt

For the Date Filling:

  • 16 oz 2 packages chopped pitted dates
  • ¼ cup granulated sugar
  • 1 ½ cups water

Optional Add-ons:

  • ½ cup chopped walnuts or almonds
  • ½ teaspoon ground cinnamon
  • 2 tablespoons honey for drizzling after baking

Instructions
 

  • Make Date Filling – In a saucepan, cook chopped dates, sugar, and water over medium heat for 10–15 minutes until thick and spreadable. Cool.
  • Prepare Crust – Cream butter and brown sugar. Add flour, oats, baking soda, and salt. Mix until crumbly.
  • Layer Base – Press half the oat mixture into a parchment-lined 9x13-inch pan.
  • Spread Filling – Evenly spread cooled date mixture over the crust.
  • Top Layer – Sprinkle remaining oat mixture on top and press lightly.
  • Bake – Bake at 350°F (175°C) for 25–30 minutes until golden brown.
  • Cool & Cut – Let cool fully before cutting into bars.
