For the Crust and Crumb Topping:
- 1 cup 2 sticks unsalted butter, softened
- 1 cup light brown sugar packed
- 1 ¾ cups all-purpose flour
- 1 ½ cups quick or old-fashioned oats
- ½ teaspoon baking soda
- ½ teaspoon salt
For the Date Filling:
- 16 oz 2 packages chopped pitted dates
- ¼ cup granulated sugar
- 1 ½ cups water
Optional Add-ons:
- ½ cup chopped walnuts or almonds
- ½ teaspoon ground cinnamon
- 2 tablespoons honey for drizzling after baking
Make Date Filling – In a saucepan, cook chopped dates, sugar, and water over medium heat for 10–15 minutes until thick and spreadable. Cool.
Prepare Crust – Cream butter and brown sugar. Add flour, oats, baking soda, and salt. Mix until crumbly.
Layer Base – Press half the oat mixture into a parchment-lined 9x13-inch pan.
Spread Filling – Evenly spread cooled date mixture over the crust.
Top Layer – Sprinkle remaining oat mixture on top and press lightly.
Bake – Bake at 350°F (175°C) for 25–30 minutes until golden brown.
Cool & Cut – Let cool fully before cutting into bars.
