- 16 ounces egg whites
- ½ cup shredded mozzarella cheese
- ½ cup whole milk cottage cheese
- ¼ cup crumbled feta cheese optional
- ¼ cup roasted red pepper finely diced
- ¼ cup spinach finely chopped (optional)
- Salt and pepper to taste
- Cooking spray for greasing
- Boiling water for steam bath
Preheat oven to 300°F (150°C) and grease muffin tray.
Blend egg whites, cottage cheese, and mozzarella until smooth.
Stir in red pepper, spinach, and feta (if using).
Pour into muffin cups (¾ full).
Place tray in a larger pan and add boiling water halfway up the sides.
Bake 25–30 minutes, until firm and lightly golden.
Cool slightly, remove, and serve warm or store for later.
