Ingredients
  

  • 16 ounces egg whites
  • ½ cup shredded mozzarella cheese
  • ½ cup whole milk cottage cheese
  • ¼ cup crumbled feta cheese optional
  • ¼ cup roasted red pepper finely diced
  • ¼ cup spinach finely chopped (optional)
  • Salt and pepper to taste
  • Cooking spray for greasing
  • Boiling water for steam bath

Instructions
 

  • Preheat oven to 300°F (150°C) and grease muffin tray.
  • Blend egg whites, cottage cheese, and mozzarella until smooth.
  • Stir in red pepper, spinach, and feta (if using).
  • Pour into muffin cups (¾ full).
  • Place tray in a larger pan and add boiling water halfway up the sides.
  • Bake 25–30 minutes, until firm and lightly golden.
  • Cool slightly, remove, and serve warm or store for later.

Notes

  • Use silicone molds to prevent sticking.
  • Avoid overbaking for a soft texture.
  • Store in the fridge for up to 4 days.
