Ingredients
  

  • cups gluten-free flour
  • ¾ tsp xanthan gum if needed
  • tsp baking powder
  • 1 tsp baking soda
  • 2 tsp cinnamon
  • ¼ tsp nutmeg
  • ½ tsp salt
  • cups sugar
  • ¾ cup brown sugar
  • 4 large eggs
  • cup unsweetened applesauce
  • cup oil canola or vegetable
  • ½ cup melted butter or oil
  • 3 cups shredded carrots

Instructions
 

  • Preheat oven to 350°F (175°C) and grease two 9-inch pans.
  • Mix all dry ingredients in a bowl.
  • In another bowl, whisk eggs, sugars, applesauce, oil, and butter.
