- 2½ cups gluten-free flour
- ¾ tsp xanthan gum if needed
- 1¼ tsp baking powder
- 1 tsp baking soda
- 2 tsp cinnamon
- ¼ tsp nutmeg
- ½ tsp salt
- 1¼ cups sugar
- ¾ cup brown sugar
- 4 large eggs
- ⅓ cup unsweetened applesauce
- ⅔ cup oil canola or vegetable
- ½ cup melted butter or oil
- 3 cups shredded carrots
