- 6 –8 whole wheat tortillas cut into triangles
- 1 cup reduced-fat cheddar cheese shredded
- ½ cup low-fat cottage cheese
- 1 can black beans about ½ cup after draining & rinsing
- ½ cup corn kernels fresh or frozen
- 1 medium tomato diced
- ¼ cup red onion finely chopped
- 1 ripe avocado sliced
- ¼ tsp cayenne pepper
- ½ tsp garlic powder
- Fresh cilantro for garnish
Preheat oven to 180°C (350°F).
Spread tortilla chips on a baking tray.
Top with chicken, beans, corn, onions, and cheese.
Bake for 8–10 minutes until cheese melts.
Add fresh tomatoes, olives, and cilantro on top.
Serve warm with optional toppings.
