Ingredients
  

  • 6 –8 whole wheat tortillas cut into triangles
  • 1 cup reduced-fat cheddar cheese shredded
  • ½ cup low-fat cottage cheese
  • 1 can black beans about ½ cup after draining & rinsing
  • ½ cup corn kernels fresh or frozen
  • 1 medium tomato diced
  • ¼ cup red onion finely chopped
  • 1 ripe avocado sliced
  • ¼ tsp cayenne pepper
  • ½ tsp garlic powder
  • Fresh cilantro for garnish

Instructions
 

  • Preheat oven to 180°C (350°F).
  • Spread tortilla chips on a baking tray.
  • Top with chicken, beans, corn, onions, and cheese.
  • Bake for 8–10 minutes until cheese melts.
  • Add fresh tomatoes, olives, and cilantro on top.
  • Serve warm with optional toppings.
