- 4 15 oz. cans hominy (white, golden, or mixed), drained & rinsed
- 3 tablespoons butter
- 4 tablespoons all-purpose flour
- 1 ½ cups warm milk
- ¼ teaspoon salt
- Pinch of white pepper
- 3 –4 ounces grated Cheddar or Swiss cheese divided
- Optional: chopped green onions paprika, or breadcrumbs for topping
Preheat oven to 375°F (190°C) and lightly grease an 8x8-inch baking dish.
In a saucepan, melt butter over medium heat. Add flour, whisking for 1 minute to form a smooth roux.
Slowly whisk in warm milk. Cook 5–7 minutes until thick and creamy.
Remove from heat. Stir in half of the cheese until melted.
Add salt, pepper, and hominy. Mix well.
Transfer mixture to baking dish. Top with remaining cheese (and optional toppings).
Bake 20–25 minutes until golden and bubbly.
Let rest for 5 minutes before serving.
