Method
- Wash the fresh lemon balm leaves under cool water and pat them dry.
- In a small pot, bring 2 cups of water to a gentle boil.
- Once the water is boiling, remove it from heat. Add the lemon balm leaves (and ginger/mint if using). Cover and let it steep for 10 minutes.
- Strain the mixture into a cup or pitcher. Add honey and lemon juice if desired.
- Drink it warm or allow it to cool and serve over ice for a refreshing herbal beverage.
