Ingredients
  

  • 1 cup fresh lemon balm leaves or 2 tablespoons dried lemon balm
  • 2 cups water
  • 1 teaspoon lemon juice optional
  • A few slices of fresh ginger optional
  • A few mint leaves optional
  • 1 teaspoon raw honey optional

Method
 

  1. Wash the fresh lemon balm leaves under cool water and pat them dry.
  2. In a small pot, bring 2 cups of water to a gentle boil.
  3. Once the water is boiling, remove it from heat. Add the lemon balm leaves (and ginger/mint if using). Cover and let it steep for 10 minutes.
  4. Strain the mixture into a cup or pitcher. Add honey and lemon juice if desired.
  5. Drink it warm or allow it to cool and serve over ice for a refreshing herbal beverage.

Notes

Enjoy this tea warm or chilled, depending on your preference.
Fresh lemon balm gives the tea a brighter flavor, while dried lemon balm is convenient for everyday use.
If using honey, adjust the amount to your preferred sweetness.
