Essential Base:
- 1/2 lb uncooked elbow macaroni 225 g
- 3 tbsp butter 43 g
- 2 tbsp all-purpose flour 16 g
- 1/2 tsp salt
- 1/8 tsp black pepper
- 1 1/2 cups milk 360 ml
- 3/4 cup half and half 180 ml
- 2 1/2 cups shredded cheddar cheese 250 g
Optional Add-ins:
- Garlic powder paprika, mustard powder
- Parmesan mozzarella, or Gruyère cheese
- Broccoli peas, chicken, or bacon
Cook pasta until al dente, drain, and set aside.
Melt butter in a pot, whisk in flour to make roux.
Slowly add milk and half & half, whisk until thickened.
Stir in shredded cheddar cheese until smooth.
Add pasta and coat well with sauce.
Serve hot, or bake with breadcrumbs at 375°F for 20–25 minutes until golden.
