Ingredients
  

  • 2 lbs halal chuck roast or stew meat cubed
  • 4 cups halal beef broth
  • 1 packet ranch seasoning mix
  • 1 packet au jus gravy mix
  • ¼ cup unsalted butter
  • 6 –8 pepperoncini peppers + 1 tbsp juice
  • 1 cup diced onions
  • 1 cup sliced carrots
  • cups baby potatoes halved
  • 2 cloves garlic minced
  • Salt and black pepper to taste
  • Optional: chopped parsley or green onions for garnish

Instructions
 

  • Melt butter in a large pot. Sauté onions and garlic until fragrant.
  • Add beef cubes and brown on all sides.
  • Stir in ranch mix, au jus mix, pepperoncini peppers, and juice.
  • Pour in beef broth, add carrots and potatoes, and bring to a boil.
  • Reduce heat and simmer covered for 1½–2 hours until meat is tender.
  • Season to taste and garnish before serving.

Notes

  • Use halal chuck beef for best tenderness.
  • Don’t skip the pepperoncini juice for signature tang.
  • For thicker soup, simmer uncovered for 10–15 minutes.
  • Can be made in a slow cooker (6–7 hrs on low).
