- 2 lbs halal chuck roast or stew meat cubed
- 4 cups halal beef broth
- 1 packet ranch seasoning mix
- 1 packet au jus gravy mix
- ¼ cup unsalted butter
- 6 –8 pepperoncini peppers + 1 tbsp juice
- 1 cup diced onions
- 1 cup sliced carrots
- 1½ cups baby potatoes halved
- 2 cloves garlic minced
- Salt and black pepper to taste
- Optional: chopped parsley or green onions for garnish
Melt butter in a large pot. Sauté onions and garlic until fragrant.
Add beef cubes and brown on all sides.
Stir in ranch mix, au jus mix, pepperoncini peppers, and juice.
Pour in beef broth, add carrots and potatoes, and bring to a boil.
Reduce heat and simmer covered for 1½–2 hours until meat is tender.
Season to taste and garnish before serving.
