Ingredients
  

  • 1 Tbsp vegetable oil
  • ½ lb halal smoked sausage beef or chicken
  • 2 cloves garlic minced
  • 1 10 oz bag frozen seasoning mix (onion, bell pepper, celery)
  • 1 15 oz can diced tomatoes
  • ½ Tbsp Creole seasoning alcohol-free, halal
  • ½ tsp dried oregano
  • ½ tsp smoked paprika
  • ¼ tsp dried thyme
  • Freshly cracked black pepper to taste
  • 2 cups halal chicken broth
  • 1 cup water
  • 1 lb penne pasta uncooked
  • 2 Tbsp half-and-half or cream
  • ½ bunch fresh parsley chopped
  • ½ bunch green onions sliced

Instructions
 

  • Heat vegetable oil in a large deep skillet over medium-high heat.
  • Add sliced halal sausage and cook until browned on both sides.
  • Add garlic and frozen seasoning mix. Cook until vegetables soften.
  • Stir in diced tomatoes, Creole seasoning, oregano, paprika, thyme, and black pepper.
  • Pour in chicken broth and water. Bring to a gentle boil.
  • Add uncooked penne pasta and press it into the liquid.
  • Cover and simmer for 12–15 minutes, stirring occasionally.
  • Turn off heat and stir in cream, parsley, and green onions.
  • Rest for 5 minutes, then serve hot.
