- 4 bunches red radishes tops removed
- 1 cup white vinegar
- 1 cup water
- 2½ tablespoons cane sugar
- 1 tablespoon sea salt
- ½ teaspoon mixed peppercorns
- ½ teaspoon mustard seeds
Wash radishes thoroughly and slice them into thin rounds.
In a saucepan, heat vinegar, water, sugar, and salt until dissolved. Do not boil.
Place sliced radishes and optional spices into a clean glass jar.
Pour warm brine over radishes until fully covered.
Let cool completely, then seal and refrigerate.
