- 300 g 10 oz raw king prawns, peeled and de-veined (thawed if frozen)
- 2 tablespoons unsalted butter
- 1 bunch spring onions chopped
- ½ leek white part only, finely sliced
- ½ red or green bell pepper chopped
- 2 garlic cloves minced
- 1½ tablespoons all-purpose flour
- 1 tablespoon tomato puree
- 200 ml halal-certified chicken or vegetable stock
- 1 tablespoon hot sauce Sriracha or Tabasco – optional, adjust to taste
- 1 teaspoon Creole spice
- 1 bay leaf
- ½ teaspoon black pepper
- Fresh parsley for garnish (optional)
Melt the Butter: Heat a large pan over medium heat and melt 2 tablespoons of butter.
Sauté Aromatics: Add chopped spring onions, leek, and bell pepper. Cook 5 mins until soft.
Add Garlic: Add minced garlic and cook 1 min. Smells fragrant.
Create the Roux: Sprinkle 1½ tbsp flour on vegetables. Cook 1–2 mins, stirring constantly. Thickens sauce.
Tomato Base: Add tomato puree and stir. Cook 1 min to show rich red color.
Add Stock: Slowly pour in 200ml halal stock. Stir well to remove lumps.
Seasoning: Add hot sauce, bay leaf, Creole spice, and black pepper. Bring to gentle boil, then simmer 5 mins.
Cook Prawns: Add raw prawns. Cook 3–5 mins until pink and firm.
Taste Test: Adjust salt or spice if needed. Remove bay leaf.
Garnish & Serve: Sprinkle fresh parsley. Serve hot over rice or with halal bread.
