- 1 ½ cups all-purpose flour
- 10 tbsp unsalted butter cold and cubed
- 1 large egg
- 2 ½ tbsp ice water
- ½ tsp sea salt
- Optional: pinch of sugar ¼ tsp garlic powder, 1 tsp dried herbs (thyme/rosemary)
Mix dry ingredients: Flour, salt, and optional herbs in a bowl.
Add butter: Rub cold butter into flour until coarse crumbs form.
Add liquids: Whisk egg and ice water, pour slowly, mix gently until dough forms.
Chill dough: Flatten into a disc, wrap, refrigerate 30–60 minutes.
Roll & shape: Roll dough to fit quiche pan, trim edges.
Blind bake: 375°F (190°C), line with parchment and weights, bake 15 min, remove weights, bake 5 more min.
Fill & bake: Add your favorite fillings and finish baking as per quiche recipe.
