- 1 whole rockfish about 3 pounds, cleaned
- 3 tablespoons extra virgin olive oil
- 2 tablespoons fresh lemon juice
- 1 tablespoon fresh thyme finely chopped
- ¼ teaspoon sweet paprika
- Kosher salt & black pepper to taste
- Lemon slices & thyme sprigs for garnish
Optional Ingredients (Halal):
- Crushed garlic
- Fresh parsley
- Light chili flakes
- Sliced onions
Preheat oven to 400°F (200°C).
Pat fish dry. Mix olive oil, lemon juice, thyme, paprika, salt, and pepper.
Rub seasoning all over and inside the fish.
Stuff cavity with lemon slices & thyme if desired.
Bake 20–25 mins until flesh is opaque and flakes easily.
Garnish and serve with rice, potatoes, or salad.
