Ingredients
  

  • 1 tbsp olive oil
  • 1 yellow onion diced
  • 3 carrots peeled, diced
  • 2 celery stalks diced
  • 4 garlic cloves minced
  • 1 tbsp grated ginger
  • 6 cups low sodium chicken broth halal-certified
  • 2 bay leaves
  • 1 lb boneless skinless halal chicken (breast or thighs, quartered)
  • 1 cup wide egg noodles or any type you prefer
  • ½ –¾ tsp salt to taste
  • ¼ tsp black pepper
  • Optional: 3 tbsp lemon juice 2–4 tbsp sriracha (for spice)

Instructions
 

  • Heat olive oil in a large pot and sauté onion, carrots, and celery for 5 minutes.
  • Add garlic and ginger; cook for 1 minute.
  • Pour in chicken broth and bay leaves, then add chicken pieces.
  • Boil, reduce heat, and simmer for 15–20 minutes.
  • Remove and shred chicken; return to the pot.
  • Add noodles and cook until tender (6–8 minutes).
  • Stir in lemon juice and sriracha (optional). Season with salt and pepper.
  • Let rest 5 minutes, then serve hot.

Notes

Let the soup rest for 5–10 minutes after cooking; this allows the flavors to blend beautifully.
