Ingredients
  

  • 2 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 5 oz halal butter or vegetable suet 10 tbsp, chilled & diced
  • 2/3 cup caster or granulated sugar
  • 1 cup dried currants or raisins, optional
  • 3/4 cup milk
  • 2 teaspoons alcohol-free vanilla extract
  • Zest of 1 lemon
  • Halal custard sauce for serving

Instructions
 

  • Grease a pudding basin with butter.
  • Mix flour, baking powder, and salt.
  • Rub cold butter/suet into the flour until crumb-like.
  • Stir in sugar, currants/raisins, and lemon zest.
  • Add milk and alcohol-free vanilla; mix into a soft dough.
  • Transfer dough into basin. Cover with parchment + foil and tie with string.
  • Steam for 1 hour 45 minutes on low simmer.
  • Rest 10 minutes, unmold, and serve warm with custard.
