- 5 oz halal butter or vegetable suet 10 tbsp, chilled & diced
- 2/3 cup caster or granulated sugar
- 1 cup dried currants or raisins, optional
- 3/4 cup milk
- 2 teaspoons alcohol-free vanilla extract
- Zest of 1 lemon
- Halal custard sauce for serving
Grease a pudding basin with butter.
Mix flour, baking powder, and salt.
Rub cold butter/suet into the flour until crumb-like.
Stir in sugar, currants/raisins, and lemon zest.
Add milk and alcohol-free vanilla; mix into a soft dough.
Transfer dough into basin. Cover with parchment + foil and tie with string.
Steam for 1 hour 45 minutes on low simmer.
Rest 10 minutes, unmold, and serve warm with custard.
