  • 28 oz mini sweet peppers red, yellow, orange
  • 2 tbsp extra virgin olive oil
  • 0.5 tsp salt
  • 0.5 tsp freshly ground black pepper adjust to taste
  • Optional: 1 tsp garlic powder lemon juice, or chopped parsley

Instructions
 

  • Preheat Oven: Set to 400°F (200°C).
  • Prep Peppers: Wash, dry, and slice mini sweet peppers in half; remove seeds.
  • Mix Coating: Combine olive oil, salt, and pepper in a bowl.
  • Toss: Add peppers and coat evenly.
  • Roast: Place on a parchment-lined tray and bake for 15–20 minutes until tender and slightly caramelized.
