- 3 cups water reduced to 2½ cups
- 12 oz 350g shrimp or tiger prawn
- 1 stalk lemongrass cut & pounded
- 3 slices galangal
- 6 kaffir lime leaves bruised
- 6 Thai chilies pounded
- 6 oyster mushrooms cut
- 2 tbsp Nam Prik Pao halal chili paste
- 3 tsp halal fish sauce or soy sauce
- 3½ tbsp fresh lime juice
- Cilantro leaves optional, for garnish
Boil Base: In a pot, add water, lemongrass, galangal, and lime leaves. Simmer for 5 minutes.
Add Shrimp: Add shrimp and cook until pink.
Flavor Boost: Stir in mushrooms and chili paste.
Season: Turn off heat, add fish sauce, lime juice, and chilies.
Serve: Garnish with cilantro and serve hot.
Optional: Adjust chilies for spice, or replace shrimp with chicken or tofu.
