Ingredients
  

  • 3 cups water reduced to 2½ cups
  • 12 oz 350g shrimp or tiger prawn
  • 1 stalk lemongrass cut & pounded
  • 3 slices galangal
  • 6 kaffir lime leaves bruised
  • 6 Thai chilies pounded
  • 6 oyster mushrooms cut
  • 2 tbsp Nam Prik Pao halal chili paste
  • 3 tsp halal fish sauce or soy sauce
  • tbsp fresh lime juice
  • Cilantro leaves optional, for garnish

Instructions
 

  • Boil Base: In a pot, add water, lemongrass, galangal, and lime leaves. Simmer for 5 minutes.
  • Add Shrimp: Add shrimp and cook until pink.
  • Flavor Boost: Stir in mushrooms and chili paste.
  • Season: Turn off heat, add fish sauce, lime juice, and chilies.
  • Serve: Garnish with cilantro and serve hot.
  • Optional: Adjust chilies for spice, or replace shrimp with chicken or tofu.
