Ingredients
  

  • 1 cup whole milk ricotta cheese full-fat for best results
  • 2 tablespoons fresh mint roughly chopped
  • 1 teaspoon fresh parsley finely chopped
  • ½ teaspoon lemon zest
  • 1 tablespoon extra virgin olive oil
  • 3 teaspoons honey
  • Sea salt to taste
  • Freshly ground black pepper to taste

For Serving

  • 1 baguette sliced
  • Olive oil for brushing bread

Optional Ingredients

  • 1 small clove garlic grated
  • Pinch of red chili flakes
  • 1 teaspoon lemon juice
  • ¼ cup crushed pistachios or walnuts

Instructions
 

  • Add ricotta cheese to a food processor or blender
  • Add olive oil, honey, lemon zest, salt, and black pepper
  • Blend for 1–2 minutes until smooth and creamy
  • Scrape sides if needed
  • Add mint and parsley
  • Pulse 3–4 times to keep herbs fresh
