Windmill cookies (Speculaas) are traditional Dutch spiced cookies shaped like windmills, made with warm spices such as cinnamon, nutmeg, and cloves. This halal-friendly version is perfect for tea time or as a festive treat.

- 2 cups 250 g all-purpose flour
- 2 tsp baking powder
- 2 tbsp Speculaas spice mix
- Pinch of salt
- ¾ cup 150 g dark brown sugar
- ⅔ cup 150 g halal-certified butter, softened
- 3 tbsp lukewarm milk or plant-based milk
- 1 tsp halal vanilla extract optional, alcohol-free
- ¼ cup sliced almonds for topping, optional
- Speculaas Spice Mix DIY: 1.5 tsp cinnamon, ½ tsp cloves, ½ tsp nutmeg, ¼ tsp cardamom, pinch of white pepper.
In a bowl, whisk together flour, baking powder, spices, and salt.
In another bowl, beat butter and brown sugar until light and fluffy.
Mix in milk and optional vanilla extract.
Slowly add dry ingredients to wet mixture until dough forms.
Wrap dough and chill in fridge for at least 1 hour.
Roll dough to ⅛ inch thick and cut into windmill shapes (or any).
Place on lined baking sheet and press sliced almonds on top.
Bake at 350°F (175°C) for 12–15 minutes until golden brown.
Cool on wire rack before serving.
