Windmill cookies (Speculaas) are traditional Dutch spiced cookies shaped like windmills, made with warm spices such as cinnamon, nutmeg, and cloves. This halal-friendly version is perfect for tea time or as a festive treat.

Ingredients
  

  • 2 cups 250 g all-purpose flour
  • 2 tsp baking powder
  • 2 tbsp Speculaas spice mix
  • Pinch of salt
  • ¾ cup 150 g dark brown sugar
  • cup 150 g halal-certified butter, softened
  • 3 tbsp lukewarm milk or plant-based milk
  • 1 tsp halal vanilla extract optional, alcohol-free
  • ¼ cup sliced almonds for topping, optional
  • Speculaas Spice Mix DIY: 1.5 tsp cinnamon, ½ tsp cloves, ½ tsp nutmeg, ¼ tsp cardamom, pinch of white pepper.

Instructions
 

  • In a bowl, whisk together flour, baking powder, spices, and salt.
  • In another bowl, beat butter and brown sugar until light and fluffy.
  • Mix in milk and optional vanilla extract.
  • Slowly add dry ingredients to wet mixture until dough forms.
  • Wrap dough and chill in fridge for at least 1 hour.
  • Roll dough to ⅛ inch thick and cut into windmill shapes (or any).
  • Place on lined baking sheet and press sliced almonds on top.
  • Bake at 350°F (175°C) for 12–15 minutes until golden brown.
  • Cool on wire rack before serving.
